Homemade Caramel Apples #Recipe

I finally found "my go to" caramel apple recipe. I usually just purchase the little caramel candy's and do the basic recipe. However, I usually end up eating half of the bag (those things are so good). For some reason my local store doesn't carry the little caramels throughout the year (you know one of those hit or miss grocery stores) therefore I had to find another option. I stumbled across this recipe on Sunday and I have already made two half batches and my family loves them. Plus this is the perfect way to use up the rest of the apples from our visit to the Apple Orchard. 

Items Needed: Recipe From
  • 8-10 small to medium apples 
  • 8-10 skewers, chopsticks or Popsicle sticks
  • 1 cup butter (do not use margarine)
  • 2 cups packed brown sugar
  • 1 cup light corn syrup
  • 1 (14oz) can sweetened condensed milk
  • 2 tsp vanilla extract
  • chopped peanuts or topping of your choice
  • waxed paper or parchment paper
  • candy thermometer

Thoroughly wash your apples. Remove the stems and insert a stick into the center of each. Dip the apples in near boiling water for 5-10 seconds and then immediately dry them to remove any wax. (This may slightly discolor the apples but that's okay.) Lay out a piece of waxed paper or parchment paper and thoroughly grease it with butter. Get your topping ready so you can roll the apples immediately after dipping.

In a large heavy bottomed sauce pan, stir together butter, brown sugar, corn syrup and sweetened condensed milk. Stir constantly over medium-high heat until butter is melted and insert your candy thermometer. Turn heat down to medium and bring to a boil. Cook, stirring constantly, until the caramel reaches 245*F on a candy thermometer.

When caramel is done, remove from heat, continuing to stir. Let cool for 1-2 minutes and add vanilla. Immediately dip apples and let excess caramel drip off. Roll into the toppings of your choice and set onto buttered wax or parchment paper. Continue with the remaining apples. If your caramel becomes too thick to dip the apples, warm slightly while stirring constantly over medium heat until you can continue dipping more apples. Let cool for 3-4 hours and enjoy!

Changing My Routine ( What Time Do you Wakeup?)

Hi Ladies,

So, I've been changing my routine around a little bit. I've learned that I am a morning person. By 8 pm I am ready for bed (usually I get up around 4:00 am). So I decided to change my daily habits around a little bit. How many task that you do when you're fully energetic that you could possibly do when it's time for bed? Do you notice that those tasks take time from your day?

Think about it, I know for me when I'm tired, I just feel like relaxing, and not working on big projects. Around that time, I can meal plan, blog hop, write my to-do list etc. I also would like to limit how much time I spend on social media. (It’s just something about Instagram though.) We’re all grown, it’s a huge difference from being on social media for “business” vs “lurking”.

Below are a couple of things that work for me (as of right now):
  • Check emails twice a day (some days are better than others)
  • Schedule out my day
  • Have dinner cooked by noon
  • To- Do List (Realistic)
  • Keep my working space tidy (How much time do you spend looking for something all because you do not have an organization system?)
  • Read daily (The more you know the more you grow)
  • Have a Blogger schedule for the month (I struggle with this)
  • Stop hoarding (throw away or donate what I don’t need)
  • Eat Dinner before 8:00 pm

(I try my hardest to have dinner cooked before Michael gets home from school. Therefore, he has my undivided attention for homework time.)

I know every day is not perfect. However, by putting structure in my day, has really made a huge difference.

Menu Planning week of 10/13/2014

What a great weekend! I was feeling a little under the weather Sunday. However, I feel a lot better today. I made homemade caramel candy apples for the first time on Sunday. Anyone that knows me knows that I love caramel apples. I have to try making candy apples. I will keep you guys updated if I ever try making them. It’s just something about those caramel apples.

My External Hard Drive Is Not Working (Please Help)

Disclaimer: This is the not the brand of the hard drive that I used. I did not post the brand name in my blog spot. 

So yesterday the Mister came to me and asked why the External Hard Drive was not showing up on my computer. I brushed him off. I was so deep into my work at the time that I really did not process the question. Well, when it was time to actually start doing work off of the drive. I noticed that my external hard drive did not popup on my computer like it normally does.

Of course I went into a panic. I started watching YouTube videos to see if anyone else had a similar problem and they DID!

I watched videos for hours… with no answer.

What hurts the most is that I have nothing saved anywhere else. I met with my computer guy last week and he stated to remove everything off of my computer hard drive and of course everything was saved on my external hard drive. I have some pictures on Google Plus backed up from my cell phone. However, all of the pictures from my DSLR and documents are saved on my external hard drive.

I’m trying my hardest not to allow this to get me down. Even though yesterday I felt sick to my stomach…

Also, I have not had much success with USB plugs in the past. My last one broke (literally) and I decided to use my external hard drive as my go to instead of a backup.

If anyone knows of any data recovery companies please let me know. If you have an external hard drive that you have had for years. Please let me know.

Glitter Bottle(s) (The Mister's Surprise Birthday) Part 2

Ok, so finally part two. As prior stated here it was very hard for me to put together ideas for the mister’s birthday/graduation party. I found a ton of theme party ideas. However, I wasn’t looking for theme party ideas. I just wanted some décor ideas to add to the party. The glitter wine bottles weren’t a last minute idea. However, me, being, me I decided to do this DIY last minute. Thus the crappy pictures, sigh.

The glitter bottles were a huge hit. Everyone one loved them!! I love how super simple they were to make. Plus they weren’t too girly. I personally thought they were pretty versatile.

Also, I used the Welch’s sparkling wine bottles. I was not about to spend a ton of money on wine (unless they were being used as giveaway prizes. If this craft was thought of months in advance I would have used empty wine bottles and put sparklers in the opening or even flowers and used them as center pieces.
Anywho, I really enjoyed this DIY. I may even make one for décor in my home. 

Here is what you are going to need:
  • All purpose Spray glue
  • Wine Bottle (I used sparkling wine) 
  • A glossy, acrylic sealer (I didn't use this. However, it would have been helpful)
  • Wine Bottle (bottle could be empty as well)
  • Your choice of glitter 

Step One: Spray bottle with All Purpose glue
Step Two: Add Glitter (repeat step one and two until bottle is covered with glitter)
Step Three: Once the bottle is completely covered with glitter. Add acrylic sealer. 

 Allow to completely dry, the time may vary based on the temps outside.

Menu Planning Week of 10/6/204

I hope everyone had an amazing weekend! I sure did J we went to the Apple Orchard over the weekend (blog post coming soon with the details) my tween had a game yesterday. It was pouring outside all day Saturday and I had the chance to bake/ prepare homemade sweet potato pie, apple pie filling (we have so many apples), apple cider, and our favorite banana muffins. Yup, I went to bed really, really, really early yesterday from being exhausted, LOL

Anywho… what’s on the menu this week?

Banana Crumb Muffins

Happy Friday!

This recipe has become a family favorite. These muffins are super moist and simply delicious. When I make them, they’re gone by the next day! I really need to start making two batches, LOL

I’m still learning how to capture pictures so please continue to bear with me. I know, I’ve had my DSLR for two years now, and I thought I would be a semi pro by now.  I really need to invest in a shadow box.

PS: So of course I didn't follow this recipe all the way through. Due to melting the butter for the crumb topping instead of keeping the butter solid. I made them again the correct way. However, they did not last long enough to snap a picture.
